I bought this for my first class in Culinary Arts and couldn't believe how wonderful it was for recipes, references, etc. When it arrived, my husband and I sat out on the back porch with a glass of wine and just poured over the pages, oooing and aaahing. We were in heaven.

Now that I'm in my second year of classes, I still refer to my first book and it already has the tell tale signs of a very well used book - sticky pages, smudges and the sort.

I would recommend this to anybody, not just knowledgeable cooks. In fact, my mother-in-law wants one for Christmas and I'm going to buy it for her.

This is a wealth of information for someone looking for a broad foundation. Was used in my first lab class at the Art Institute.

I missed the first edition but the second and third volumes were outstanding. This fourth edition adds to the reputation already built. The new chapters on flavoring and vegetarian cooking come close to making this a universal source book on cooking.

I needed On Cooking for my wife's Culinary Institute curriculum. Locally the book was not available, but through Amazon we had it delivered in just a few days. We also got the latest revision which was not available here. It has been a very good experience shopping through Amazon; the website is very informative and easy to navigate. I have since ordered software and other publications and the shopping experience continues to be excellent.
As far as the book and the content is concerned, it has become one of my wife's most valuable reference tools .

I was informed that this particular text book was in new condition and that it came with the scantron test form sheet. Not only did it NOT have the scantron test form sheet I needed but it had writing and highlighted parts inside the book. (answers for quizzes not sure if correct)After several e-mails to the seller I sent it back for a refund. (She said she could only send half)I am still waiting for my money. I had to buy a new book at the college bookstore.
