Not a good choice December 4, 2007 I was very disappointed in this book. The "Sugar-free" claim is a complete misnomer, because this book uses fructose sugar (apple juice) in almost every recipe, claiming these are "sugar-free" just because they don't use cane-derived sugar (sucrose).
Also, if you are like me looking for recipes that are simultaneously gluten-free, lactose-free, high fiber, low fat, and sugar-free, prepare to be disappointed. This book's recipes do not address difficult special diets that have multiple restrictions. Each recipe only addresses one or two restrictions. The book doesn't seem to cater to many real conditions that require multiple restrictions.

I bought this book because over the half the recipes were supposed to be wheat free. My son is allergic to wheat, not gluten, and can have oat, rye, and barley. But he is allergic to wheat, and that includes spelt, which IS a form of wheat. (We tried spelt, and he is definitely allergic.) I am very disappointed - Because he has multiple allergies (also eggs and milk), I don't believe there's a single recipe in the book that I can use. Anybody want my copy?

I found that most of the recipes were based on the premise that the person has a breadmaking machine. I don't. You can still use it to make the recipes I suppose but it doesn't give the details of time and temperature. I wouldn't have ordered it if I had known that.

This book will give recipes for wheat free and regular types of bread. Very helpful. I do enjoy it.

I'm allergic to wheat and spelt, but I can tolerate rye and some other grains. Most baking books either have wheat in every recipe (and I mean *every* recipe), or else they are completely gluten free (yech.) Easy Breadmaking for Special Diets contains a wealth of recipes for *everyone*. There are many that contain wheat or spelt; there are also many that are totally gluten free. There are vegan recipes, yeast-free recipes, etc--truly something for everyone. For me, there are some excellent recipes that use 100% rye flour, that have turned out beautifully in my bread machine. I never thought I'd get to eat a good sandwich again but this book has proved me wrong.
