I just love this rich vinegar for all sorts of dishes and for baking fruit pies and cobblers. I first ran across the use of fruit and other vinegars in a Williams-Sonoma recipe for a berry dish .... basically, you put sugar and a fruit vinegar onto the berries, let them marinate for 30 minutes, add the topping and bake. The use of these vinegars just opened my eyes. I use them now in salad dressings as well as marinades and fruit desserts. The other one I like a lot is Fig vinegar ... but the Late harvest Riesling is my favorite. It's vinegary and rich and has a touch of sweetness and just adds a whole new dimension to many foods.
