Baking crescent rolls, florentines, or other delicate goods on ordinary baking sheets requires precise timing and heat to avoid overbrowning. Pros know that an insulated sheet--two layers of metal with air between them--bakes goodies with less danger of burning. Paid $11 for this on Amazon. Needed a new cooking sheet. Glad I got this one... good size, and distributes heat evenly. I recommend it.
Very good cookie sheet February 7, 2008
I've had no real problems. The only time something went wrong is when I sprayed some non stick spray on it. Because it has such a highly non stick surface already, everything would slid off the sheet when in the oven. So my advice is to not use non-stick spray with this cookie sheet. Otherwise, it works great when I remember not to spray it, LOL.

the cookie sheet does bend in the oven but gets back to its shape when it cools down.

Excellent cookie sheet. Cookie does not burn or stick to pan. It is much more expensive than other cookie sheets that I purchased.
