This book contains all the needed details for how to dry fruits and vegetable and for how to use them for cooking. I haven't used it yet, but I have read it and it is very comprehensible.

I wasn't terribly impressed with Mary Bell's Complete Dehydrator Cookbook. As a matter of fact, I think the little booklet that came with my Nesco Dehydrator had more detailed information. This book is useful for general information and there are some recipes in the back to help you use your dehydrated items but I found it lacking real information, it's more of a compilation of "tips.". This book does give of an overview of the dehydrating process, choosing the right machine and the basic items you can use. If you're looking for detailed recipes for making more than jerky and what the water content of different fruits and vegetables, I say "keep looking."

I've done some dehydrating for many years and thought I was pretty well-informed. This book has taught me so much more that I'd never dreamed possible! Mary provides clear hints on how to do things to get the ultimate best results. Great help!!
