Pan-fried Shrimp with Green Curry Cashew Sauce

Serves 4
Prep Time: 15 minutes
Total time: 15 minutes

You can purchase bottled Thai green curry sauce in most supermarkets, but this recipe proves how quick and easy it is to make your own. Refrigerate any leftover sauce, covered, for up to 3 days.

1 slice (1/4 inch thick) peeled fresh ginger
3/4 cup plus 2 tablespoons roasted unsalted cashews
1/3 cup plain low-fat yogurt
1/4 cup packed cilantro leaves
1 tablespoon brown sugar
1 teaspoon curry powder
Coarse salt and fresh ground pepper
1 1/2 pounds peeled and deveined large shrimp
2 tablespoons olive oil

1 In a food processor, pulse the ginger until finely chopped. Add the 3/4 cup cashews; process until smooth, 2 to 3 minutes.
2 Add the yogurt, cilantro, sugar, and curry powder; season with salt. Process until incorporated, 1 to 2 minutes, scraping down the sides as needed. Transfer to a serving bowl; sprinkle with the remaining cashews.
3 Season the shrimp with salt and pepper. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add half the shrimp; cook until opaque throughout, 2 to 3 minutes. Repeat with the remaining tablespoon oil and remaining shrimp. Serve the shrimp with the sauce.

5 out of 5 stars Love this Cookbook   October 3, 2008
I love this cookbook. Everything is easy and quick to make. Plus everything I have made so far has tasted amazing. I use this book a lot during the week because I want something healthy but fast. We loved the chicken stir fry with lettuces wraps, chicken tostas, and the grilled chicken with asparagus and potatoes. I strongly suggest buying this book no matter what kind of cook you maybe(good or bad).

5 out of 5 stars It really is great fast food   September 29, 2008
I'm very picky when it comes to cook books - I want clear descriptions, indications of time and I really want pictures. I'm very visual and its the pictures that catch my eye and help me decide what to cook. I also want meals that you can actually make in an evening, that don't require too much thought or too many steps.

This cook book has all the above neccessary items and the one essential one - the recipes work and are delicious. I've made several of the dishes and all of them have turned out just like the picture and received compliments and been devoured. I'd love this cook book and want more like it!

It's a minimal investement for some really great dinners.

5 out of 5 stars Heavenly!!   September 13, 2008
Now, this is no exaggeration... I tried 1 of the recipes a few days ago (pg. 74 - linguine and turkey sausage), took a taste and had an instant smile on my face that I couldn't get rid of. I couldn't believe what I had cooked and how great it tasted! Prior to this book, my recipe scope was so limited and I was growing tired of the same ol', same old. I love that the recipes are not complicated. You read the recipe and you think you know what the dish is going to taste like. Then "POW", your taste buds are awakened! It's always that unexpected ingredient or that extra step that makes the difference with the dishes. Plus, you use everyday ingredients. I never have to run out to the store to buy some far-fetched ingredient that I'll never use again. A lot of the recipes call for the same stuff. I love this book! I'd recommend it to anyone, any day.
