This is the BEST pie book. I've made a lot of pie and have been searching for the perfect sweet potato and pecan pies for a while. I stopped searching after trying McNair's recipes (though I do cut the sugar in the sweet potato by 1/4 cup). His coffee crunch pie is delicious, as well, though you need to let the filling cool completely (not just 15 minutes) before adding the whipped cream. Can't wait to try the rest. Really, if you're looking for great pie recipes, buy this book!

This was the first cookbook I used to make a pie; that was 17 years ago and it is the ONLY book I use for making pies. People try to give me other pie cookbooks, but they don't even come close to Mr. McNair's book. Easy to follow recipes, beautiful photos and scrumptous pies. No one else in my family will make a pie. I am known among family and friends for being the best pie maker and I owe it all to this wonderful little book. I even bought a back up copy for when the first falls apart!

I've been baking pies for over 30 yrs. and consider myself an above-average baker. However, the "Making Perfect Pies" section has tips on baking pie crusts that I have never seen in any other book - it calls for a couple of more steps in the process, but these extra steps are WELL worth it. I only make my pie crusts the "James McNair" way now - and the results have been incredible. All my pies now get RAVE reviews! Thank you, James McNair is all I can say.

this was one of the first compliments I received after making one of the pies found in this terrific book; and the compliments keep rolling in. You can't beat this book if you're looking for pie making tips. The recipes are simple and straightforward - and tasty! I have worn out my first copy already since I refer to it almost every time I make a pie. The only thing that would make the book better would be if it were spiral bound!

Wow! The previous reviewer is exactly right on every point. These recipes are awesome. The pictures are gorgeous. Everyone raves about my pie crust, which tastes and looks great! The pecan pie is especially good -- not too sweet, and the sweet potato pie is to die for. The coconut-coconut-coconut pie is my husband's favorite, but I like the summer peach pie the best. If you like to bake pies - or eat them - buy this book.
