If you have lots of time and patience, you might be able to produce the results shown in these beautifully photographed cookies. Even though I committed the error of not thoroughly reading all of the steps before I started the ebony and ivory tiles, I couldn't believe that when I came to step 4, the directions did not continue to the next page, which left me with the problem of what to do next. Plus, what is a batarde? After looking this up in many dictionaries, I finally found out it is a loaf of white bread. White bread? So the step 4 directions say "Using a batarde or... (at this point the recipe skips to step 5!) Help! I want to have fun when baking, not a headache.
I also agree with the previous writer about the frivolous write-ups starting each recipe. The cookies are good, but not that good. I'll be sticking to the "easy" recipes and making sure that there are no editing errors that will leave me guessing.

This book is an absolute must have for anyone who loves to bake cookies. I love to bake and have a big collection of cookbooks but have never felt the need to buy a single other cookie book.
The book is divided up into chapters based on the type of cookie, including your classic drop cookies (oatmeal raisins, chocolate chips), hand rolled cookies (snickerdoodles, etc), oversized cookies, spritz cookies, international cookies (this chapter has a huge, broad selection of wonderful cookies from around the world), meringues, biscottis, and more. Carole Walter provides a very scientific and in-depth analysis of baking techniques, providing bulleted lists of secrets, tips, and troubleshooting. This is a very, very informative book, perfect for the novice baker or for anyone who loves to bake. However, I will say if you are interested in decorating cookies, this is not the book for you. There are no recipes for things like royal icing and virtually no tips on decorating. The book is more about the cookies themselves.
Overall, this is an incredible book and I highly recommend adding it to your collection!

I have had this book for several years, and everything that I have made from it has tasted delicious! Last weekend I made the Apple Pie Bars, and they were so fabulous that I could have finished off the entire pan myself. It is a beautiful book that includes pictures of the cookies, and very detailed instructions for each recipe. I also like that the recipes state how to store the cookies, whether they freeze well, etc. This is a great book, and I find myself using it more frequently than many of my other cookie and dessert cook books.

The cookies in this book are extremely well executed. "Great Cookies" is one of my top three favorite cookie books.
